Hoppy Easter

I hope everyone had a happy Easter weekend!

My husband was back in Ontario, so I decided to do some baking while I had free reign of the house! I even found the most adorable Peter Rabbit spatulas from Williams-Sonoma to help me out! Of course I also decided to take a couple of pictures along the way.

I made a couple of different treats, including lemon curd filled vanilla cupcakes, birds nests with Cadbury Mini-Eggs, and some lemon-meringue tarts.

Easter-10These guys are my favourite…I made them a little ‘sweet and salty’ by melting in some peanut butter, Reese’s spread, toasted coconut and nuts!Easter-11Lemon meringue was in order with so much extra lemon curd! The meringue recipe from the Joy of Cooking held up like a champ! I even used lemon juice in lieu of cream of tartar and those peaks still held strong!
