I hope everyone had a happy Easter weekend!
My husband was back in Ontario, so I decided to do some baking while I had free reign of the house! I even found the most adorable Peter Rabbit spatulas from Williams-Sonoma to help me out! Of course I also decided to take a couple of pictures along the way.
I made a couple of different treats, including lemon curd filled vanilla cupcakes, birds nests with Cadbury Mini-Eggs, and some lemon-meringue tarts.
The mess begins!! Armed with the Joy of Cooking and these adorable Peter Rabbit Spatulas! It was time to take some pictures of delicious candy while everything was setting in the fridge or cooking in the oven I had to get some classic Jelly Beans! One of my Grandma’s favourite treats!(I even cleaned up a bit!)Peeps in honour of the Just Born factory in Bethlehem PA–where I went to High School!
These guys are my favourite…I made them a little ‘sweet and salty’ by melting in some peanut butter, Reese’s spread, toasted coconut and nuts!Lemon meringue was in order with so much extra lemon curd! The meringue recipe from the Joy of Cooking held up like a champ! I even used lemon juice in lieu of cream of tartar and those peaks still held strong!
Ok enough drooling and time to start eating treats!
