Hoppy Easter

I hope everyone had a happy Easter weekend!

My husband was back in Ontario, so I decided to do some baking while I had free reign of the house! I even found the most adorable Peter Rabbit spatulas from Williams-Sonoma to help me out! Of course I also decided to take a couple of pictures along the way.

I made a couple of different treats, including lemon curd filled vanilla cupcakes, birds nests with Cadbury Mini-Eggs, and some lemon-meringue tarts.

Armed with the Joy of Cooking and these adorable Peter Rabbit Spatulas! Easter-2Easter-7 It was time to take some pictures of delicious candy while everything was setting in the fridge or cooking in the ovenEaster-5Easter-6 Easter-9I had to get some classic Jelly Beans!  One of my Grandma’s favourite treats!Easter-8(I even cleaned up a bit!)Easter-3Easter-4Peeps in honour of the Just Born factory in Bethlehem PA–where I went to High School!
Easter-10These guys are my favourite…I made them a little ‘sweet and salty’ by melting in some peanut butter, Reese’s spread, toasted coconut and nuts!Easter-11Lemon meringue was in order with so much extra lemon curd! The meringue recipe from the Joy of Cooking held up like a champ! I even used lemon juice in lieu of cream of tartar and those peaks still held strong!
Easter-12Ok enough drooling and time to start eating treats!
